  • Mix well to form a smooth dough. Knead for 5-7 minutes.
  • Cover the dough and let it rest for 1 hour, or until it doubles in size.

For the filling

  • In a mixing bowl, add mashed potatoes, onion, green chili, turmeric powder, red chili powder, coriander powder, garam masala powder, amchur powder, salt, and coriander leaves. Mix well.
  • Divide the filling into 6 equal portions.

For the kulchas

  • Preheat a griddle or tawa over medium heat.
  • Divide the dough into 6 equal portions.
  • Take one portion of the dough and roll it into a small circle.
  • Place one portion of the filling in the center of the circle.
  • Bring the edges of the dough together to cover the filling completely.
  • Flatten the dough and roll it out into a circle, around 6-7 inches in diameter.
  • Place the kulcha on the hot griddle or tawa.
  • Cook for 2-3 minutes, or until the bottom is golden brown.
  • Flip the kulcha over and cook for another 2-3 minutes, or until the other side is golden brown.
  • Remove from the griddle and brush with melted butter or ghee.
